Bruschetta al Fresca
1-1/2 cups seeded and chopped tomatoes (about 2 to 3 tomatoes)
3 tablespoons chopped fresh basil
2 tablespoons olive oil
1 tablespoon balsamic vinegar
1 teaspoon garlic salt
1 teaspoon seasoned pepper
1 baguette French bread, cut diagonally into 1/2" slices
garlic spread, ready-to-spread
parmesan cheese, shredded
In medium bowl, gently mix together first six ingredients. Cover and refrigerate to blend flavors for 1 hour or up to 24 hours. Evenly spread garlic spread on baguette slices; broil until golden. Top each slice with 1 tablespoon tomato mixture and garnish with parmesan cheese.
Makes about 1-1/2 cups (for about 24 bread slices).
