Broiled Lemon Halibut
3 tbs. vegetable oil
Grated peel and juice from 1 lemon
Paprika, to taste
4 halibut steaks, 1-1/2 to 2 pounds
Salt and freshly ground black pepper, to taste
Preheat oven broiler. In a small bowl, combine oil, lemon
and seasonings. Lightly brush halibut with the oil mixture; place fish in broiler
pan. Broil 4 to 5 inches from heat for 5 to 6 minutes on each side, or until fish
flakes easily with a fork. Brush occasionally with remaining oil mixture.
Makes 4 servings.
