Lemon Dill Shrimp Skewers
1 pound large shrimp, peeled and deveined
4 wooden skewers, soaked in water at least 15 minutes
olive oil
lemon pepper to taste
1/4 cup butter or margarine, melted
1/2 tablespoons lemon juice
2 teaspoons finely chopped fresh dill
3/4 teaspoon lemon pepper
Thread shrimp onto skewers. Brush shrimp with olive oil and sprinkle with lemon pepper. Grill shrimp over medium heat, until shrimp turn opaque and pink, about 5 minutes, turning once during grilling. Meanwhile, in small bowl, thoroughly combine melted butter, lemon juice, dill and lemon pepper. Brush shrimp generously with butter mixture before serving.
